GRILLED TUNA WITH THAI BASIL IN BANANA LEAVES (PEPES IKAN TONGKOL THAI BASIL)

GRILLED TUNA WITH THAI BASIL 
IN BANANA LEAVES
(PEPES IKAN TONGKOL THAI BASIL)

INGREDIENTS:

4 Slice of Tuna meats
Thai Basil Leaves as you wish
20 sheets of banana leaves
tooth picks to seal the banana leaves
3 tablespoons of vegetable oil


GROUND SPICES:

10 red chillis
6 red baby chills
3 tomatoes
1 tablespoon white sugar
Salt to taste
1 tablespoon of shrimp paste
6 candlenuts
5 cloves of garlic
5 onions

---> Grind all spices


HOW TO MAKE:

Steam the tuna meat for 25 minutes.
Lift and Crack the tuna meats into chunks.
Heat 3 tablespoon of vegetable oil.
Saute ground spices until fragrant.
Add the tuna meats and mix well.
Add thai basil and mix well.
Leave on the pan for 20 minutes until the water evaporates while mixing it.
Lift and set aside.
Put double banana leaves on the table.
Pour the tuna on top of the banana leaves.
Roll the banana leaves to cover the tuna.
Use tooth picks to seal both ends of the leaves.
Put on the steamer.
steam for 30 minutes.
Lift and serve with warm rice.


RESEP DALAM BAHASA INDONESIA

BAHAN YANG DIGUNAKAN:

4 daging ikan tongkol
Daun kemangi sesuai selera
20 lembar daun pisang
tusuk gigi untuk menyematkan daun pisang
3 sendok makan minyak goreng


BUMBU HALUS:

10 cabe merah
6 cabe rawit merah
3 buah tomat
1 sendok makan gula pasir
garam secukupnya
1 sendok makan terasi
6 kemiri
5 siung bawang putih
5 bawang merah

---> Haluskan semua bumbu halus


CARA MEMBUAT:

Kukus ikan tongkol selama 25 menit.
Angkat dan suwir-suwir daging ikan tuna hingga halus.
Panaskan 3 sendok makan minyak goreng.
Tumis bumbu halus sampai harum.
Tambahkan daging tuna dan aduk rata.
Tambahkan daun kemangi dan aduk rata.
Biarkan 20 menit sampai air meresap sambil diaduk-aduk.
Angkat dan sisihkan.
Letakkan daun pisang disusun dua lapis diatas meja.
Taruh campuran tuna diatas daun pisang.
Gulung daun pisang sampai menutupi tuna.
Gunakan tusuk gigi untuk menyematkan kedua ujung gulungan daun pisang.
Letakkan dalam kukusan.
Kukus selama 30 menit.
Angkat dan hidangkan dengan nasi hangat.
